Technology from the Indonesian Agency for Agricultural Research and Development fortifies rice with iodine

Iodinated rice processing technology is a technology to fortify rice with iodine that is expected to be able to reduce the number of persons who lack of iodine. At early stage, lack of iodine may cause hypothyroidism and for long term, it causes intelligence, mental and physical disturbances on children.

Basically, the fortifying technology uses iodine's character; it binds amylase, the main component of rice, easily. Iodine fortification is done by adding binding material. The research result shows that the use of iodat fortification (IO3) in rice by using binding materials indicates that the iodine level in rice is 7.47 ppm and 4.6 ppm in cooked rice. Organopletic test shows that the taste of iodinated rice is not different from the common one. The iodinated rice also looks brighter and more attractive than the common rice that looks dull and dusty. The process to add iodine only costs IDR 3-5 per kg of iodinated rice.

This technology is now being massively used in rice processing sites.
